Good morning!  Happy Monday!  I'm keeping it short for now, but this is what will be on or plates this week...

this week's menu... and trying to save a little bit on my grocery bill...

I'm late!!!  I'm sorry!

Stupid Netflix got me hooked on "Extreme Couponing"........

What???  I had to pass the blame to someone (or, something- whatever).  One of the organizing ladies that I watch on YouTube, Malitose79, talked about it on her channel and I was instantly hooked!  (check out her other channels, too: TheStayAtHomes, and her new channel, OrganizedClutterbug)

So, I went and gathered up the fliers for the stores I shop at and had my husband pick up a couple of Sunday papers for me....  combining the sales fliers, my coupons, some deals that Jill Cataldo listed on her deals of the week page and some of my family's favorite recipes I put together a shopping list and hit the town!

...I can't do my grocery shopping until later on in the week (when we get a deposit from a rental car we used for an out-of-state trip back), so I'm having another "make it work" (see: Tim Gunn) moment this week!

This week's menu...

Before I start babbling about food and such...  HAPPY BIRTHDAY to my wonderful husband!!!  I love yoooouuuu!!!!

Now, back to business (sort of)...  I'm feeling like my blog has turned into a recipe blog.  Which is fine, recipes are good (of course) ...  I'm just feeling like I need to get back to some of my crafty posts.  Eh, hopefully soon.

Easter went really well.  I made my first leg of lamb, which came out wonderfully!!!!  It was a little heavy on the mint pesto, but the meat was cooked absolutely perfectly.  So yummy.  We also did an Easter egg hunt in our backyard with some family...

...my kids are oddballs...

So, anyway...  I didn't get nearly as much spring cleaning done over the kids' spring break as I had hoped to, but I'm thinking that's okay since I'll probably get more with them out of the house anyway.  Since I have "scrub out the fridge/freezer" and "organize the pantry" on my to-do list, and a very limited grocery budget for the week (still thanks to car repairs), I'm going to try to get creative and make due with what we have.  Which leads to...
